The mushrooms used in the production of Milas Çıntar Kavurması are a variety known as Lactarius Semisanguifluus, locally called "çıntar," naturally growing in forests and appearing after rains from late September to the end of January within the geographical region.Milas Çıntar Kavurması has a historical background, dating back a long time, and holds significant importance in the culinary culture of the Milas district. Therefore, it has a regional reputation.

Production Method:

Ingredients:
- 15-16 çıntar mushrooms - 1 medium-sized onion - 100 ml olive oil - 10 g red pepper flakes (hot, sweet, or mixed) - 5-6 g black pepper - 3-7 g salt - Lemon - Parsley - Dill

Preparation of Milas Çıntar Kavurması:
Collected çıntar mushrooms from wooded areas are thoroughly washed with plenty of water, taking care not to break them, and then drained. They are placed in boiling water in a pot and boiled for 15 minutes. After boiling, çıntar mushrooms are removed from water and chopped to the desired size.

Thinly sliced onions are sautéed in olive oil until they turn pink in a pan. Çıntar mushrooms, salt, black pepper, and red pepper flakes are then added sequentially, and the mushrooms are sautéed until they release their water during the cooking process. The cooking process is concluded when the liquid released by the mushrooms is fully absorbed.
