Description and Distinguishing Features of the Product:

Milas Çaykaması is a pastry produced by layering a dough made with wheat flour, corn flour, olive oil, yogurt, egg, salt, and water. The filling is placed between the layers of dough, and a mixture of kaymak (cream obtained from boiled fresh milk) and olive oil is poured on top. It is then baked in the oven. The olive oil used in production is Milas Olive Oil, registered with the geographical indication number 201. Milas Çaykaması is served in 10 x 10 cm slices, accompanied by strained yogurt or buttermilk. Additionally, it can be presented for sale in food-grade containers.

Milas Çaykaması has a rich history dating back to ancient times and holds a significant place in the culinary culture within its geographical boundaries. Production Method:

In the production of Milas Çaykaması, plants grown within the geographical region and curd cheese produced within the geographical boundary are used. Preparation of the dough: Wheat flour is mixed with corn flour. Yogurt, Milas Olive Oil, egg, salt, and warm water are added and mixed. After kneading, the dough is left to rest.Preparation of the filling: All plants are chopped and mixed. Curd cheese, salt, and Milas Olive Oil are added and thoroughly mixed.

Preparation and baking of Milas Çaykaması: The baking tray for the pastry is greased with Milas Olive Oil and butter. Half of the dough is spread over it. The filling is evenly placed over the entire surface of the dough. The other half of the dough is spread over the filling after being diluted with 200 ml of water. A mixture of kaymak and Milas Olive Oil is whisked and evenly spread over the dough. In an oven preheated to 200°C, the pastry is baked for 35-40 minutes or until the top is golden brown.

Once removed from the oven, Milas Çaykaması is sliced into 10 x 10 cm pieces after cooling and served with strained yogurt or buttermilk. Additionally, it can be presented for sale in food-grade containers.
