Adana Bici Bici is made from starch, typically colored with natural food dye, often enriched with rose water to achieve a dark cherry color, and prepared with powdered sugar and finely grated ice. The name "Bici Bici" is inspired by the sound produced when starch is compressed between the fingers during its preparation. With a history dating back, and offering a refreshing sensation during Adana's hot spring and scorching summer temperatures, Adana Bici Bici is renowned in the region. The expressions used by the people of Adana to describe themselves, such as "Adanalıyık! bici yerik, şalgam içerik!" (We are from Adana! We eat Bici Bici, drink turnip juice!), also indicate the significant place Adana Bici Bici holds in the local culture.

Preparation of Finely Grated Ice:

The ice used in serving Adana Bici Bici can be either industrial or homemade. The crucial factor is that the ice is suitable for fine grating in terms of size and dimensions. A clean cloth is placed on a marble block measuring 10x15x50 cm, and the ice is laid on top. The marble block allows the ice to settle at the base and remain stable during the grating process. A skilled person shaves the ice with a grater that has a special compartment, producing snow-like ice. The fine consistency of the ice, resembling snowflakes, is important for quickly cooling the Bici Bici syrup, making it spoonable, and ensuring rapid melting in the mouth. For dental and throat health, ice particles should quickly melt in the mouth without requiring biting and should be small enough.

Preparation and Serving of Adana Bici Bici:

The Bici Bici tray, which has been refrigerated for one day, is placed on the counter. The Bici on the tray is cut into approximately 5 cm squares. During the serving, the skilled person takes one square slice from the tray and dices it into small cubes. The diced Bici Bici is placed in a regular-sized serving bowl. Finely grated ice is added to the Bici Bici cubes as desired. The skilled person, using manual dexterity, creates a hollow to sprinkle the desired amount of powdered sugar onto the grated ice covering the Bici Bici cubes. After that, the entire ice is drizzled with Bici syrup until it takes on a red appearance.

If desired, fruit slices (such as banana, strawberry, cherry, etc.) can be added on top. Adana Bici Bici is served in a bowl with a plate underneath, and for consumption, it is served with a spoon and straw. A small bowl of powdered sugar is also provided alongside Adana Bici Bici.
