Dinar Taptama Meatballs


Product Description and Distinguishing Features:

Dinar Taptama Köfte / Dinar Taplama Köfte is a type of meatball prepared using half-fat minced beef, fine bulgur for meatballs, onions, eggs, wheat flour, garlic, salt, black pepper, and red pepper. These meatballs are produced by frying them in hot oil or cooking them on a griddle over a wood fire. They can be consumed either hot or cold.

Dinar Taptama Meatballs

Dinar Taptama Köfte / Dinar Taplama Köfte has an oval shape, approximately 8 cm in diameter and 1 cm in thickness. The name "Taptama / Taplama köfte" comes from the sound produced when shaping the meatball mixture in the palm of the hand by clapping the palms together.

Having a significant place in Dinar's culinary culture, Dinar Taptama Köfte / Dinar Taplama Köfte, with its historical roots, is especially offered during special occasions such as births, condolences, weddings, military send-offs, and circumcision ceremonies. Hence, it is closely associated with a geographical region and has gained recognition.

Preparation:

Minced meat, flour, half of the bulgur, egg, red pepper flakes, black pepper, salt, and 200 ml of water are mixed in a bowl. The mixture is kneaded for approximately 15 minutes until a homogeneous mixture is obtained. To prevent the mixture from drying out during kneading, 100-200 ml of water can be added. The remaining bulgur, grated onion, and garlic are added to the mixture, and kneading continues for another 10 minutes. Careful and meticulous kneading is essential during this process to prevent the product from breaking apart and losing its integrity during the frying/cooking stage. The kneading process is considered complete when the mixture changes color, no longer appears raw, and the bulgur grains swell and attain a large and soft texture.

Portions of approximately 60 g are taken from the prepared mixture, shaped into wide, oval forms in the palm, and then fried in oil. After removing the meatballs from the oil, they are placed on a plate with paper towels to absorb excess oil.
