Cizre Memilheva Cookie, an important part of the culinary culture and a traditional treat served during weddings, holidays, invitations, and visits in the Cizre district, is made using almond kernels, sugar, and egg whites. Cizre Memilheva Cookie is associated with the geographical boundary.Cizre Memilheva Cookie is shaped in a form similar to a toothed wheel, with approximately 1 cm thickness and 6, 9, or 12 cm in diameter, featuring 6, 9, or 12 protrusions. Due to the abundant use of almonds in the product, the almond flavor is more pronounced than the sugar. It has a slightly crispy and crumbly texture that melts in the mouth.

Production Method:

Ingredients:
1.5 kg almond kernels 1 kg powdered sugar 5 egg whites

Almonds are placed in a pot, covered with enough water, and brought to a boil. Once the almond skins have softened, they are peeled and prepared for grinding. After setting aside some almonds to be placed on top of the cookies without grinding, the rest are ground until they reach a pastelike consistency. In a separate bowl, egg whites are beaten with sugar. The ground almonds are added to the egg white and sugar mixture and kneaded until it forms a dough. Once the mixture is in dough form, it is divided into equalsized portions.

Without using a rolling pin, the portions are shaped by hand to approximately 1 cm thickness, with diameters of 6, 9, or 12 cm, and featuring 6, 9, or 12 protrusions. To prevent the dough from sticking to the tray, sugar is sprinkled on the tray, and the shaped cookie dough pieces are arranged on top.

In the center of each cookie, one almond is pressed for those with a 6 cm diameter, two almonds for those with a 9 cm diameter, and three almonds for those with a 12 cm diameter. The tray is placed in a preheated oven at 180 200 °C and baked until only the surface turns pink to preserve the shape. Once removed from the oven, the cookies are left to cool, and after reaching room temperature, they are ready to be served.
