Akhisar Domat Olive Oil is an extra virgin olive oil produced using Akhisar Domat Olives, which are registered as a geographical indication with the number 166 within the same geographical region.

Production Method:

Akhisar Domat Olives, registered as a geographical indication with the number 166, are harvested within the geographical boundaries. Olives suitable for olive oil production are washed with purified water to rid them of foreign matter. The cleaned olives are transferred to crushers and crushed by adding water at a temperature of up to 26°C. The crushed olives are turned into a paste within stainless steel containers circulating water outside, with the option of heating the olive paste up to a maximum of 26°C to achieve the desired paste consistency. This process breaks the oil-water emulsion in olives, increasing the free oil percentage.

The olive paste is separated into olive oil and pomace either by centrifugation or pressing. The olive oil, separated from the pomace, is separated from the black water it contains. The obtained olive oil is stored in stainless steel tanks suitable for food contact, away from direct sunlight, in an environment with a temperature between 18-22°C. The olive oil is clarified from its sediments using the earthy filtration method. After the filtration process, the olive oil is filled into food-contact suitable glass or tin packaging. Olive oils that will not be immediately supplied to the market are stored in stainless steel tanks suitable for food contact, in an environment without odors that may adversely affect the product, away from direct sunlight, at a temperature of 20°C.

Stored olive oil is clarified from sediments using the paper filtration method before being introduced to the market. Akhisar Domat Olive Oil is measured and filled into packaging before being sealed securely. The packaging bears the Akhisar Domat Olive Oil logo and geographical indication emblem. The logo, stating "Akhisar Domat Olive Oil," is used on the packaging, with a size of at least 3x3 cm, not exceeding 2/3 of the brand's logo size, depending on the packaging dimensions.
